2 cups of Dried Apricots
1 1/2 cups of Water
1 cup of Almond Meal
1/2 cup of Coconut Meal
1/2 cup of Fine Desiccated Coconut
1 teaspoon of ground Cardamon
1 teaspoon of ground Cinnamon
3/4 cup of ground Pistachios

Preparation Time:    15-20 minutes
Makes:    20-25 balls (pending size)

In a small pot place the 2 cups of Dried Apricots, add the 1 1/2 cups of water and bring to a simmer over medium heat.  Simmer for 5 minutes or until all the water has been absorbed by the apricots.  They will become a little plump and soft.  Remove from the heat and allow to cool for 5-10 minutes.

Place the Pistachios in a food processor or nut grinder to process.   When ground remove and place aside in a bowl.
IMG_4551aPlace the Apricots, Almond Meal, Coconut Meal, Cardamon and Cinnamon in a food processor to combine well.  Place the mixture in a bowl, add the fine desiccated Coconut and combine well.
The mixture should resemble a paste.

With wet hands take a small amount of the mixture and roll it between your palms into a ball shape.  Repeat this process until you have made all the balls.
Coat each ball with the ground Pistachios.  Place in an airtight container and refrigerate.

Cook’s Tips

These are a great treat or snack.  You will notice that they are not sweet as no extra sugar has been added.  The sweetness is there from the apricots.  If you prefer them a little sweeter feel free to add a little sugar.  You may have some ground Pistachios left over.  Place them in a well sealed glass jar to be used later.

  1. What a healthy sweet snack! I would never thought I could create such a healthy snack…You are genius Milanka! <3 I loved how you used that red and white container to put those apricot delights inside…It seriously looked very pretty!!! 😉

    1. No, No not at all. All in moderation Ben. I am currently in my second 12 week challenge, I exercise 5 days a week and eat 5 small meals a day. Breakfast is usually the largest meal. However, I treat myself on the weekend as I enjoy wine & good food. More on that later. Thank you for your visit & message. I will endeavor to post something lighter????? Let’s see how I go. 🙂 🙂
