I always like to make a few nibbles to kick the night off. While one is having a drink it is always a good idea to have a little bit food to accompany the beverage you are serving. I adore Smoked Salmon and this starter goes well with a drink or two. It is very easy to make chop, mix and serve.
Ingredients
120 grams of Smoked Salmon (cut into small pieces)
250 grams cream cheese
2 spring onions (finely sliced)
12 capers (finely chopped)
3 gherkins (finely chopped)
2 teaspoons of lemon juice
1/2 bunch of dill (finely chopped)
salt & freshly ground black pepper
Preparation Time: 20-30 minutes
Makes: 13cm x 5cm log
Serves: 4-6 people
In a large bowl place the cream cheese and soften a little with a fork. Add the spring onions, capers, gherkins, lemon juice, 2 teaspoons of dill, salt and pepper. Using a fork, mix all the ingredients together. Add the smoked salmon and combine into the cheese mixture with a spoon.
The mixture should be firm. Place the remaining chopped dill onto a clean plate. With wet hands roll the mixture into a log and coat with the dill by rolling it on the plate or by sprinkling the dill with your hands onto the log.
