Asian Style Broccolini with Tofu & Snow Peas

At times, keeping it simple with a vegetarian dish is all that one needs for those easy, no fuss, weeknight dinners.  A few ingredients combined together (i.e.  two vegetables, tofu, garlic, ginger, salt and pepper) in a hot pan is a perfect example of simplistic cooking that can be enjoyed by all.

Ingredients
2 bunches of Broccolini
250 grams Tofu (firm variety cut into small pieces)
200 grams Snow Peas
1 small knob Ginger (peeled and finely grated)
1 clove Garlic (chopped)
salt and freshly ground black pepper
3 tablespoons of vegetable or peanut oil

Preparation Time:     15 minutes (approximately)
Cooking Time:      15 minutes (approximately)
Serves:     2 people

Top and tail the snow peas removing the stringy part. Rinse and place aside in a bowl.  Boil water in a kettle, add boiled water to the snow peas.  Allow pea pods to blanche in the boiled water for one minute to get a beautiful bright green colour. Strain in a colander and rinse under cold running water and place back in the bowl. Rinse, trim the ends of the broccolini and cut in half again keeping the stems and place aside.

Heat oil over medium to high heat and brown the tofu on both sides. Once the tofu is crispy and browned, remove from the pan and place aside. Add garlic to the hot pan, saute for a half a minute, add the ginger cook for a little longer, then add the broccolini, continue cooking for a further two minutes.   The broccolini should remain bright in colour and firm.  Add the snow peas, tofu to the pan and stir through, combine and heat all the ingredients through and serve immediately.

Cook’s Tips

I blanche my snow peas quickly with water from the kettle.  It is a quick process and the snow peas remain  firm, bright and crunchy.  It is best not to overcook vegetables, especially broccolini you want them to remain firm and vibrant.
