300grams Sliced Pariser
1/2 Small Spanish Onion (finely chopped)
2 Small Gherkins (finely chopped)
1 Tablespoon of chopped fresh Dill
2 Tablespoons of good quality Mayonnaise
2 Tablespoons of Yoghurt
Juice of 1/2 Lemon
Salt & Pepper to taste

Serves:   4
Preparation time:   15-20 minutes

Slice the Pariser into small pieces and place in a bowl.  Add chopped Spanish Onion, chopped Gherkins, freshly chopped Dill.  In a separate bowl add the Mayonnaise, Yogurt, Lemon juice, salt and pepper and mix well.  Add the dressing to the Pariser, Spanish Onion, Gherkins, Dill and mix well.

This simple dish can be served for lunch or dinner.  It is especially great during the hot summer.  It can be made ahead of time and refrigerated until you are ready to serve.

Cook’s Tips
During the hot summer, I enjoy serving this dish with a Simple Tomato Salad, a Frittata, cold cut meats and crusty Italian bread.
