This easy to make, luscious, sweet, delectable relish will accompany a selection of cheeses for that special Christmas cheese board, ham or a selection of meats. Your friends will appreciate receiving a gift made with love that they can enjoy with some of their favourite food.
Ingredients
2 cups naturally dried figs (roughly chopped)
4 pears (firm but ripe)
2 cups dates (roughly chopped)
1/2 cup walnuts (roughly chopped)
3 cups boiling water
1 cup brown sugar
1/2 cup apple cider vinegar
1 cinnamon stick
3 star anise
1/2 teaspoon ground cardamom
Preparation Time: 15 minutes (Approximately)
Cooking Time: 40 minutes (Approximately)
Makes: 6 cups (Approximately)
Combine fruit with the boiled water in a large saucepan and stand for 15 minutes. Add the remaining ingredients to the pan, stir over high heat, bring to a gentle simmer and add the sugar. Stir and allow the sugar to dissolve. Reduce the heat, simmer uncovered, stirring occasionally for about 40 minutes or until relish is thick.
Remove the cinnamon stick, star anise and discard.
Spoon the hot relish into hot sterilised jars, seal immediately. Label and date jars when cold.
Cook’s Tips
From the above yield, I filled 5 x 320 gram jars.
Store relish in a cool, dark place for at least 1 week before opening. Refrigerate after opening.
You can serve the relish with ham, cold meats, in sandwiches and of course cheese.
