Home cooked meals need not take hours in the kitchen. This quick Lamb Kofta recipe is effortless, delicious and full of wonderful exotic spices. When they are sizzling on the griddle, the kitchen is filled with wonderful middle eastern aromas.
Ingredients
1 kg Lamb Mince
2 Spring Onions (finely sliced)
2 tablespoons of Coriander (chopped)
1 teaspoon Cumin (ground)
1/2 teaspoon Cardamon (ground)
1 teaspoon fresh Ginger (grated)
1 teaspoon Hot Paprika
1 teaspoon Cinnamon
1/2 cup Pine Nuts
1 egg (beaten)
Salt & Pepper to taste
Dressing
1 tablespoon Tahini
1 teaspoon Pomegranate Syrup (Molasses)
2 tablespoons Yoghurt
Lemon juice (drizzle)
salt & freshly ground pepper
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Makes: 14 Koftas
In a large bowl combine lamb, spring onion, coriander, ginger, dry spices, pine nuts, beaten egg, salt and pepper. Mix and combine all the ingredients.
Place a handful of the mixture (the size of your palm) in your hand and roll into a sausage shape. When you have made all the Koftas, place them on a tray or plate and put them in the fridge for 30 minutes.
The Koftas can be cooked on a BBQ, griddle pan or in a frying pan with a little olive oil.
For the dressing combine the Tahini, Pomegranate syrup and Yoghurt mix well. Add the lemon juice a little at a time mix through and taste to ensure it’s to your liking. Add a little salt and pepper.
Cook’s Tips
A wonderful accompaniment to this meat dish are Grilled Vegetables with a Tahini, Pomegranate Syrup and Yogurt Dressing as well as Hummus and fresh Pomegranates.
When cooking the Koftas try not to over cook them to ensure that they remain juicy.
The vegetables (Capsicums, Zucchini and Eggplant) were grilled on a griddle pan and the Eggplant finished off in a frying pan with a little olive oil. This reduced the overall cooking time.
